The perfect snack if you’re looking for something filling, fruity and healthy!
- 1 cup fresh blueberries
- 2 cups oats
- 1 cup pancake/waffle mix
- ¼ cup oil (preferable canola oil, but others will do)
- 2 tablespoons brown sugar
- 3 tablespoons honey
- ½ tablespoons cinnamon
1. Preheat oven to 375° F.
2. Wash blueberries well.
Mix the wet ingredients: oil and honey.
Add the dry ingredients and mix well: pancake mix, oats, brown sugar, cinnamon. (You may want to add some water if it looks dry).
Grease a tray lightly and pour the mix into the tray. Even out the batter.
6. Place in the oven for 30-45 minutes. At 45 minutes, my dish was a bit on the crunchy side!
