Ingredients:
- 2-3 handfuls of dark green lettuce
- ½ thin-sliced carrot
- ¼ large tomato
- 1/3 can of small kidney beans
- 1 pinch of thin-sliced ginger
- 1 tablespoon raisins
- 1 tablespoon craisins (dried cranberries)
- 2-3 tablespoons walnuts
Place ingredients in a medium-sized salad bowl, in the order listed.
Sesame Dressing:
For this dressing, we will be using sesame oil, which is healthier than other oils such as vegetable or corn oil. According to LiveStrong.com, sesame oil is a healthy source of fat, with a small amount of saturated fat and large amounts of heart-healthy fat. It can play a role in the increase of HDL cholesterol or “good” cholesterol and lower “bad” LDL cholesterol.

Ingredients:
- 1 oz soy sauce
- 1 oz sesame oil
- 2 oz vinegar (preferably apple cider vinegar)
- 1 tablespoon Dijon mustard
- 1 teaspoon ground ginger
- 1 teaspoon ground pepper
- 1 tablespoon sugar
- optional: sesame seeds
Mix all the ingredients into the jar and add 2 ounces of water. Shake well and serve. You’ve got yourself a healthy and delicious meal!
