Ingredients:

¼ cup almonds

2 cups kale

¼ cup onion, chopped

extra-virgin olive oil

¼ cup raisins

salt

pepper, ground
Instructions:

Slice each almond into 3 lengthwise pieces

Cook kale, onion and almonds with olive oil. Drizzle the olive oil over top the kale to add flavor. Cook for about 5 minutes

Add raisins. Sprinkle salt and pepper to taste. Reduce heat and mix for 3 minutes

Serve the salad on its own or as a side dish. It goes really well with the Chickpea Rice Blend!
